Ingredients
- 2 ripe avocados
- 1/4 cup crumbled feta cheese
- 1 tbsp fresh lemon juice
- 1 tbsp olive oil, plus more for drizzling
- Salt and black pepper, to taste
- 2–4 slices crusty bread (sourdough, multigrain, or baguette)
- 1/2 cup cherry tomatoes, halved
- Optional: red pepper flakes, chopped fresh herbs (basil, parsley, dill), balsamic glaze
Instructions
- Toast bread slices until golden and crisp.
- In a bowl, mash avocados with a fork. Stir in feta, lemon juice, olive oil, salt, and pepper.
- Spoon avocado–feta mixture generously onto each toast.
- Top with halved cherry tomatoes.
- Finish with a drizzle of olive oil and optional garnishes like herbs, red pepper flakes, or balsamic glaze. Serve immediately.
Notes
- Add a poached or fried egg for a heartier meal.
- Use roasted tomatoes for a warm, richer variation.
- Mix in harissa or red pepper for spice, or everything bagel seasoning for crunch.
- Prep the avocado–feta mix ahead and toast bread fresh before serving.
