Ingredients

  • 2 ripe avocados
  • 1/4 cup crumbled feta cheese
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil, plus more for drizzling
  • Salt and black pepper, to taste
  • 24 slices crusty bread (sourdough, multigrain, or baguette)
  • 1/2 cup cherry tomatoes, halved
  • Optional: red pepper flakes, chopped fresh herbs (basil, parsley, dill), balsamic glaze

Instructions

  1. Toast bread slices until golden and crisp.
  2. In a bowl, mash avocados with a fork. Stir in feta, lemon juice, olive oil, salt, and pepper.
  3. Spoon avocado–feta mixture generously onto each toast.
  4. Top with halved cherry tomatoes.
  5. Finish with a drizzle of olive oil and optional garnishes like herbs, red pepper flakes, or balsamic glaze. Serve immediately.
