Ingredients

  • 2 sheets puff pastry, thawed
  • 2 cups apples, peeled and diced (e.g., Granny Smith or Honeycrisp)
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 egg
  • 1 tablespoon water (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, cook diced apples with sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice until the mixture thickens and apples are tender. Let cool slightly.
  3. Cut puff pastry sheets into squares. Spoon a bit of apple filling into the center of each square and fold over into triangles.
  4. Seal edges with a fork and place on prepared baking sheet.
  5. Whisk egg with water and brush over the turnovers for a golden finish.
  6. Bake for 20–25 minutes until puffed and golden brown.
  7. Let cool slightly before serving. Optional: dust with powdered sugar or drizzle with glaze.
