Ingredients

  • 8 sheets phyllo dough
  • 6 tbsp butter, melted
  • 3 medium apples (such as Honeycrisp or Granny Smith), peeled, cored, and thinly sliced
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 6 oz Brie cheese, sliced
  • 2 tbsp honey
  • 1/4 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss sliced apples with brown sugar, cinnamon, and lemon juice.
  3. Lay one sheet of phyllo dough on the baking sheet and brush lightly with melted butter.
  4. Repeat layering and buttering phyllo sheets until all sheets are stacked.
  5. Arrange the apple mixture in the center of the phyllo stack, leaving a wide border.
  6. Place sliced Brie evenly over the apples.
  7. Fold the edges of the phyllo over the filling to form a rustic galette.
  8. Brush exposed phyllo with additional butter.
  9. Bake for 28–30 minutes until golden, crisp, and bubbly.
  10. Remove from oven, drizzle with honey, sprinkle with nuts, and serve warm.

Notes

  • Firm apples hold their shape best during baking.
  • Add pears or fresh herbs like thyme for variation.
  • Reheat in the oven to maintain crisp phyllo texture.
  • Caramel can be used instead of honey for extra indulgence.
